“Prime Butcher” really has two meanings. The most obvious is that they are a purveyor of prime meats, the highest grade of meat as classified by the USDA. But another meaning has more to do with the word “prime” itself, and its literal definition, “first”. This is an indication of the shop as a source… the first source… for the products it sells. In this case, it means that the butcher is working from whole primal cuts of meats received directly from wholesalers, farms and ranches without any additional processing. All the butchering is done on the premises and little, if anything, is pre-cut for display in the store.
Your steak is not a steak until you order it. Until then it’s part of a whole ribeye, strip or tenderloin. Your lamb or pork chops remain on the rack until cut to your specifications. Our fish comes straight from Fulton Fish Market daily. Whole fish are filleted in the store and portioned to order.
Finally, we purchase our high-quality products in small quantities, taking daily deliveries from our purveyors and distributors. This extra care ensures that not only are you getting the best product, but you’re getting it as fresh as fresh can be.
